Bursting with all the flavors of fall, this decadent and easy bread pudding mixes tender seasonal squash, creamy chocolate, and spicy ginger for a tasty treat you'll serve again and again!

1. Preheat the oven to 375°F. Line a rimmed baking sheet with parchment paper. Arrange squash halves cut side up on the baking sheet. Brush each half with the melted butter and sprinkle with brown sugar. Roast for 30 to 40 minutes or until the squash is caramelized, tender, and can easily be pierced with the tip of a knife. Let the squash cool before handling.
2. Reduce the oven temperature to 350°F. Butter a 13x9 casserole dish and set aside.
3. While the squash cools, prepare the custard. In a large mixing bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, salt, and cinnamon.
4. Place the cubed bread into the custard mixture and let it soak for 15 minutes.
5. When the squash is cool enough to handle, cut the flesh away from the skin and cut into 1-inch pieces.
6. Gently fold the acorn squash, chocolate chunks, walnuts, and crystallized ginger into the bread mixture.
7. Pour the mixture into the buttered casserole dish. Bake for 30 to 40 minutes until the top of the bread pudding turns golden brown and the custard is set. Keep an eye on your bread pudding around the 20 to 30 minute mark. If the bread is browning too much, cover the dish with aluminum foil. Serve warm or cool to room temperature.
