Marinated in Greek flavors then grilled or baked to perfection, these easy Greek Chicken Kebabs make for a delicious and healthy dinner option. Serve with our Homemade Tzatziki Sauce to add an even more authentic and delicious flavor.

Step 1: Prepare the marinade.
Cut the chicken into 1 -1 ½ inch pieces and place in a bowl, large Ziploc bag, or shallow baking dish In a separate bowl, combine olive oil, fresh lemon juice, bay leaves, dried oregano, dijon mustard, and salt and pepper, and whisk until smooth Pour the marinade over the chicken and stir to coat. If using a bag, slowly add marinade to the bag and make sure chicken is well oated. Be sure to seal it tight, letting as much air out as possiblePlace coated chicken in the refrigerator and let marinate for at least 30 minutes or up to 6 hours. You can even soak them in this marinade overnight. The longer meat marinates, the more flavorful it is and the faster it will cook. This is a great dish to prep in advance!
Step 2: Prepare your kebabs.
While chicken is marinating, cut red and yellow bell pepper and red onion into 1-1 ½ inch pieces. Slice zucchini. Add some olive oil, salt and pepper and oregano to a separate bag and shake the bag to coat the veggies before putting them on skewers. Alternatively, brush them with a mixture of olive oil, salt and pepper on skewer before cooking.Remove chicken from the marinade and thread on skewers alternating with fresh veggies, leaving a space in between each ingredient and using about 4 ounces of chicken per skewerIf using wooden skewers, be sure to soak them in water for 15 minutes before threading the chicken
Step 3: Cook your kebabs.
Preheat the grill on medium heat with about 1 tbsp of olive oil. Cook the skewers for 3-4 minutes per side (12-16 minutes total). Bake until veggies are tender and chicken is cooked through, or when a meat thermometer reads 165 degrees FStep 4: Make the tzatziki saucePlace grated cucumber on a toweland squeeze out all excess water. While skewers are baking, combine cucumber, yogurt, olive oil, garlic, lime juice, salt and dill in a small bowl and mix well. Cover and place in the refrigerator until ready to serve
Step 5: Enjoy! Allow skewers to cool before serving. Serve with homemade tzatziki sauce. Add a side of pita bread or hummus, or any seasonal side dish of your choice!
Notes: Cut all skewer pieces into uniform sizes to ensure it cooks evenly. The chicken, peppers, zucchini, and red onion should all be about the same size.
How to store: Remove meat and veggies from skewers and store in an airtight container for up to 3 days. You can reheat leftovers in microwave. Keep homemade tzatziki sauce chilled in refrigerator.
